THIS NEW MENU represents a creative and quality turning point for the project. Fernández returns to his origins, both personal and conceptual: on the one hand, those of his native Cádiz, evoking the history of Gadir, where the Phoenicians expanded the first alphabet and whose echo resonates in the symbols with which he now illustrates the flavor profiles of each cocktail. On the other hand, those of his career at Momus, where previous proposals such as Colors, Geometry or Growing already invited us to look at the world with wonder, curiosity and without prejudice, as if it were the first time.
ALL THIS TAKES SHAPE in a letter that functions as a poetic manifesto: a careful object, almost a storyteller, where the design coexists with the narrative, and where the figure of the god Momo – a symbol of irony and playful criticism – who gives its name to the bar resonates again. “We return to the origin not as archaeologists, but as alchemists; we do not seek relics, but seeds”.
